  • - 4 cups of Watermelon chunks
  • - 1.5 cups of Jicama (You can purchase either pre-sliced or whole. The picture above shows jicama whole to help you find it in the store.)
  • - 2 sprigs of Mint
  • - 1 Lime
  • - Himalayan Salt
Instructions
  1. - In a large bowl toss watermelon and jicama
  2. (If your jicama is whole, chop into slices before tossing with watermelon)
  3. - Chop mint leaves and toss into bowl generously
  4. - Squeeze 1 lime over salad
  5. - Sprinkle lightly with Himalayan salt
  6. - Give it a final toss and enjoy
