Watermelon Jicama Salad

Ingredients
- - 4 cups of Watermelon chunks
- - 1.5 cups of Jicama (You can purchase either pre-sliced or whole. The picture above shows jicama whole to help you find it in the store.)
- - 2 sprigs of Mint
- - 1 Lime
- - Himalayan Salt
Instructions
- - In a large bowl toss watermelon and jicama
- (If your jicama is whole, chop into slices before tossing with watermelon)
- - Chop mint leaves and toss into bowl generously
- - Squeeze 1 lime over salad
- - Sprinkle lightly with Himalayan salt
- - Give it a final toss and enjoy
