Don’t you love a warm cookie? A little crispy on the outside and soft on the inside? Eating plant based hasn’t left me with many delicious cookies to choose from. Actually, I have yet to find a plant based cookie with no oil… so, I made my own. This is my version of the classic Chocolate Chip Cookie. I hope you enjoy it too.
The Perfect Chocolate Chip Walnut Cookie

Ingredients
- 2 flax eggs (4 TB of ground flax seed to 9 TB water)
- 1 cup of mashed banana (the best banana for this is the one with freckles)
- 1½ cup of all purpose flour
- 1 tsp (heaping tsp) baking soda
- ½ tsp salt
- 2 tsp vanilla
- ¼ cup maple syrup
- ¼ cup of vegan chocolate chips (I use the highest cocao percentage)
- ⅓ chopped walnuts
Instructions
- Mix all of the ingredients listed above together well.
- Add any extra goodies you would like; I use chocolate chips in this batch.
- On a cookie sheet (lightly grease if needed) place 2 TB worth of a cookie on the sheet until all the dough is on the sheet.
- Bake on 350 for 12 mins.
