Mushroom Leek Quiche

This quiche is simple and tasty. With a few ingredients, you will have a dish that everyone can enjoy.

Ingredients

  • 1/2 cup finely sliced leek

  • 2 chopped cloves

  • 8 oz sliced mushrooms

  • 1 cup of shredded spinach

  • 12 oz firm tofu

  • 1/3 cup nutritional yeast

  • 1/3 cup nut milk

  • 2 tsp amino acids

  • 1 tsp dry thyme

  • 1 tsp dry oregano

  • 1/2 tsp powder turmeric

  • 1/4 tsp black pepper

  • 1/4 tsp salt

  • 2 sliced roma tomatoes

  • 1 pie crust

Directions

  • Saute leeks and garlic for 4 minutes on medium heat.
  • Add mushrooms and saute on medium heat for 4 more minutes. Add small amounts of water, as needed, to not burn veggies.
  • Reduce to low and add spinach. Saute until wilted and place to the side.
  • In a blender, add tofu, nutritional yeast, nut milk, and amino acids. Blend until smooth.
  • In a large bowl, mix vegetables and tofu mixture. Add remaining spices and mix very well.
  • Pour into pie crust and even mixture out. (I used a premade pie crust. Follow instructions on crust before baking.
  • Place sliced tomatoes on top and bake at 350 degrees for 50 minutes.
  • Set to cool in refrigerator for 1 hour before enjoying.
