This quiche is simple and tasty. With a few ingredients, you will have a dish that everyone can enjoy.
Ingredients
1/2 cup finely sliced leek
2 chopped cloves
8 oz sliced mushrooms
1 cup of shredded spinach
12 oz firm tofu
1/3 cup nutritional yeast
1/3 cup nut milk
2 tsp amino acids
1 tsp dry thyme
1 tsp dry oregano
1/2 tsp powder turmeric
1/4 tsp black pepper
1/4 tsp salt
2 sliced roma tomatoes
1 pie crust
Directions
- Saute leeks and garlic for 4 minutes on medium heat.
- Add mushrooms and saute on medium heat for 4 more minutes. Add small amounts of water, as needed, to not burn veggies.
- Reduce to low and add spinach. Saute until wilted and place to the side.
- In a blender, add tofu, nutritional yeast, nut milk, and amino acids. Blend until smooth.
- In a large bowl, mix vegetables and tofu mixture. Add remaining spices and mix very well.
- Pour into pie crust and even mixture out. (I used a premade pie crust. Follow instructions on crust before baking.
- Place sliced tomatoes on top and bake at 350 degrees for 50 minutes.
- Set to cool in refrigerator for 1 hour before enjoying.
