My Bachlorette Party is coming up soon and where else would I have it besides Key West? Well, maybe a more secluded island far far away but Key West isn’t that far and is an all time favorite of mine to visit. Anyways, as I have been planning I started to crave the tangy key lime flavor this tiny fruit Key West has to offer. FUN FACT: one visit to Key West I had a key lime something with EVERY MEAL we ate . . . true story.
The local market had these little guys on sale and I couldn’t pass them up to satisfy my urge. But then the question was, what would I make? I wanted quick and I wanted easy so I went with a mix it up in the food processor version that is bite size.
My goal for these tangy, bitty, bites was to have enough tart in one bite to satisfy the key lime craving. Well, lets just say mission accomplished Then I got a little adventurous and dipped a few in chocolate.

- ⅔ cup Buckwheat Flour
- 16 Key Limes worth of Juice
- ¼ cup Agave
- 1½ cup of coconut flakes
- ⅛ tsp salt
- ¼ cup of chocolate chips (optional, for dipping)
- Place all ingredients in a food processor and mix until it forms a doughy consistency
- Take a bit size of the dough a ball up and place on cookie sheet
- Fill up the sheet until all the dough is balled up
- Place sheet in freezer for 15 mins
- Dip in chocolate if you desire. (I use 100% cacao chips, melt them over a double burner and dip the bites in for a complimenting taste to the tangy dessert.)
Oh and I should mention these little guys go great with a nice warm cup of tea.
